Vegan Protein Blondies (Flour Free)
Ok guys, I have been working on this recipe for a while and think I have finally perfected it. These blondies (aka blonde brownies) are completely flour free, made using whole chickpeas and only good, clean, nutritious ingredients- in particular protein packed ingredients.
My favorite way to eat these is with a glass of my homemade almond milk, but I also love taking them with me on my hiking adventures to give me that extra energy boost along the way. Or just when I want a delicious treat!
Also I know in some places hemp seeds are hard to get a hold of (Aka in Australia where they aren't yet allowed to be sold as "food", sigh). You can omit the hemp seeds from the recipe and the blondies will still taste delicious. If you do have access to them, however it is great to use for their high protein content.
Heres how I make them:
Ingredients:
1 1/2 cups cooked chickpeas (1 15oz can)
1/2 cup almond butter
1/3 cup hemp seeds
1/3 cup date sugar (or you can use coconut sugar or xylitol)
1/3 cup dark chocolate chips (I use these sugar free ones)
1/4 cup olive oil
1 teaspoon baking powder
1/2 teaspoon vanilla essence
1/4 teaspoon baking soda
1/4 teaspoon salt
Directions:
Preheat oven to 350 F/180 C
Grease a brownie or cake pan with a little olive oil.
Place all ingredients except for choc-chips into a food processor or high speed blender. Blend until smooth (you may need to stop the blender a few times to scrape down the edges).
Once smooth, scrape mixture into the pan. Add choc-chips to the mixture. Combine the choc-chips in by mixing with a spoon or by kneading mixture with your hands.
Bake for 30-40 mins, depending on how fudgy you like your blondies.
Allow to cool before slicing as it will be crumbly when hot.
