Apricot Coconut Bliss Balls

I have been making these bliss balls regularly over the past couple of months trying to perfect the recipe, and finally, here it is!

I use these as a quick and easy snack throughout the day, as a source of pre-workout energy, or as fuel to keep me going when I go on a long hike. 

If you don't have a food processor you could try making these by finely chopping the apricots and pumpkin seeds, then hand mixing these with the remaining ingredients. 

Here's how they are made.

Ingredients:

1 cup dried apricots

1/2 cup shelled hemp seeds

1/2 cup unsweetened sunflower butter

1/2 cup raw pumpkin seeds

1/3 cup coconut butter

2 tablespoons maca powder (optional)

1/2 teaspoon salt (*only If sunflower butter you use is unsalted)

Directions:

Add all ingredients to food processor and blend until smooth, stopping occasionally to scrape mixture down from the edges. Adjust your blending time based on whether you prefer the bliss balls on the chunky or smooth side.

Once mixture reaches desired texture, form into balls then refrigerate.
