Banana, Date & Cardamon Cookies
All I can say is... Yum! I just finished eating one of these cookies from my most recent experimental batch and I am so happy with the result! Previous batches were either too dry, too much cardamon, not enough cardamon etc etc.... So I'm so happy to have finally got the balance right! So delicious and made with only clean, wholesome ingredients. If you don't have access to quinoa flour you can experiment with other flours such as chickpea, spelt, wholewheat or oat flour. Here's how to bake them:
Prep time: 8-10 mins
Cooking time: 25-28 mins
Makes about 15 cookies
Ingredients:
1 1/4 cup almond meal
2/3 cup quinoa flour
2/3 cup pitted dates
1/3 cup unsweetened coconut flakes
1/3 cup extra virgin olive oil
1 medium-large ripe banana
1 egg (Or flax egg if you want to make these vegan)
1 teaspoon vanilla essence
1 teaspoon cardamon powder
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
(Optional) 1/8 teaspoon stevia powder.
#Note: I don't like things too sweet and find these cookies sweet enough with just the banana and dates, however if you like things on the sweet side, add the stevia.
Directions:
Preheat oven to 350 degrees F/180 degrees C
Place flour, almond meal, baking soda, baking powder, cardamon powder, coconut flakes, salt and stevia (optional) into a medium/large bowl and mix well to combine.
Finely chop the dates then mix them in with the dry ingredients. Put aside.
In a separate bowl, mash the banana until it is mostly smooth (a few small bumps are fine). Beat in the olive oil, egg and vanilla essence. Pour mixture in with the dry ingredients and stir until just combined.
Scoop out a heaped teaspoonful of the mixture and place on a large, greased baking tray (the scoop should be a little smaller than a golfball). Repeat until finished. Using a fork, press down on the center of each ball of cookie dough. (Dipping the fork in water before each time you press down helps as it reduces the stickiness).
Place tray in the oven and bake for 25-28 mins, or until golden around the edges. Remove from oven and place on a baking rack to cool.
