Baked Peach & Blueberry Crumble

A delicious, protein packed vegan dessert that even people who are scared of healthy food will enjoy!

Ingredients:

Filling

4 ripe peaches

1 cup blueberries

Crumb Topping

1/3 cup coconut oil

3/4 cup rolled oats

1/4 cup quinoa flour

1/4 cup coconut flakes

1/3 cup coconut sugar

2 tablespoons hemp seeds

1 tablespoon ginger powder

Directions:

1) Preheat oven to 350 degrees F/180 degrees C

2) Remove the stones from the peaches and slice. Layer the peaches into a pie dish and top with the blueberries

3) Mix all crumb topping ingredients together and layer over the top of the fruit.

4) Bake for 55 to 60 minutes or until the crumb topping is crisp and the fruit is bubbling.
