Avocado Chocolate Raspberry Pudding
This is one of those desserts that, even though I know it is healthy, I make it scarcely because I am slightly addicted... It just tastes so good! It is naturally sweetened, vegan, raw and simply divine. Plus it is super simple to make. You will need a food processor or high speed blender for this recipe- I don't know how things would go with a regular blender, particularly with trying to get the dates to become smooth. You could always give it a try though! Here's how its made:
Prep time: 10 mins
Serves- 4-6
Ingredients:
1 cup ripe avocado flesh
1 cup frozen (thawed) raspberries or fresh raspberries
1 cup pitted dates
3 tablespoons cacao powder
1 teaspoon vanilla extract
1/8 teaspoon salt
Directions:
Place dates into a food processor or high speed blender and pulse for 1-2 minutes until blended. Add avocado flesh, raspberries, cacao powder, vanilla and salt and blend until completely smooth- about 5-8 mins. While blending, stop regularly to scrape the mixture from the edges of the machine.
Serve with fresh fruit or enjoy on its own. Simple, quick and super delicious!
